I found that I could use a table that had been imported from OneNote, but I couldn't add columns. In the end, I couldn't let an experiment stand in the way of being able to get my day job done. I have a burning project on my plate that I cannot spend time trying to figure out how to hack the answer in Evernote, so I've switched back to OneNote.
